Raising forest functinal level to 2012 R2


we have 2 aging domain controllers , planning hardware upgrade both.  along hardware upgrade we'd raise forest functional level.  question this: can stand couple of 2012 r2 dc's, decom old dcs, raise forest functional level 2012 r2?

our environment single domain two server 2003 r2 sp1 dcs.  current domain/forest functional level 2000.  old dcs rather brittle in terms of configuration , i'd limit configuration changes them.

once have new 2012 r2 dc's online, configuration tasks necessary before powering off old dcs?

the windows 2012 r2 final edition yet released & date somewhere around 18th of oct 2013. coming question, can raise dfl/ffl 2012 r1, cautious if have 3rd party apps such unix/linux or legacy application running might not function way used post upgrade. confirmation vendor before rolling out changes.
