i have read alot do, other input if possible make educated decision.

thanks in advance

your question broad question cannot readily answered in forum this.

the days of requiring physical servers in role - other hypervisor - past.  in other words, quite common place roles virtual.

whether or not physical servers have enough memory or horsepower is pretty difficult call because have nothing on base loads , requirements.

you might want consider failover cluster (requires form of shared storage) allow high availability of environment.  failure on single node causes automatic restart of vms on node of cluster.

as office across campus, if not want install locally on client systems, can set remote desktop services server providing office on network.  or, can think office 365 service microsoft , not worry managing environment @ all.

but beyond generalities, technical forums better vehicles answering specific questions rather broad, encompassing questions this.
